Provencal Chicken and Tomato Ragout with Poached Egg

Ingredients

  • •1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • •1 tablespoon olive oil
  • •1 medium yellow onion, chopped
  • •3 cloves garlic, minced
  • •1 (14.5 ounce) can diced tomatoes, undrained
  • •1/2 cup chicken broth
  • •1/4 cup dry red wine (like Merlot or Cabernet Sauvignon)
  • •1 teaspoon dried thyme
  • •1 bay leaf
  • •Salt and freshly ground black pepper to taste
  • •2 large eggs
  • •1 tablespoon white vinegar (for poaching eggs)
  • •Optional: Fresh parsley, chopped for garnish
  • •Optional: Crusty bread or garlic crostini for serving

Instructions

  1. 1

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Add chicken pieces and sear for 5-7 minutes until browned on all sides. Remove chicken from the pot and set aside.

  2. 2

Reduce heat to medium, add chopped onion to the pot, and sauté for 5-7 minutes until softened and translucent. Add minced garlic and cook for another 1 minute until fragrant.

  3. 3

Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes until slightly reduced.

  4. 4

Stir in the diced tomatoes (undrained), chicken broth, dried thyme, and bay leaf. Bring the mixture to a gentle simmer.

  5. 5

Return the browned chicken to the pot. Season with salt and pepper. Cover the pot and reduce heat to low. Simmer for 30-35 minutes, or until the chicken is very tender and the sauce has thickened, stirring occasionally.

  6. 6

While the ragout simmers, prepare to poach the eggs. Fill a separate saucepan with about 3-4 inches of water and add white vinegar. Bring to a gentle simmer, just below a boil.

  7. 7

Carefully crack each egg into a small bowl or ramekin. Gently slide each egg into the simmering water. Poach for 3-4 minutes for a runny yolk and set whites. Remove with a slotted spoon and drain excess water.

  8. 8

Discard the bay leaf from the ragout. Taste and adjust seasoning as needed. Ladle the hot chicken and tomato ragout into two serving bowls. Gently place one poached egg on top of each serving.

  9. 9

Garnish with optional fresh chopped parsley and serve immediately with optional crusty bread or garlic crostini for dipping.
