Pan-Seared Tuscan Herb Chicken with Creamy Sun-Dried Tomato Sauce

Ingredients

  • •2 boneless, skinless chicken breasts, about 6-8 oz each
  • •1 tablespoon olive oil
  • •1 tablespoon unsalted butter
  • •2 cloves garlic, minced
  • •1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • •1/2 cup chicken broth
  • •1/2 cup heavy cream
  • •1/4 cup grated Parmesan cheese
  • •1 teaspoon dried Italian herbs (rosemary, thyme, oregano blend)
  • •Salt and freshly ground black pepper to taste
  • •1 cup fresh spinach, packed
  • •Optional: 2 tablespoons fresh basil, chopped, for garnish

Instructions

  1. 1

Pat chicken breasts dry with paper towels and season generously with salt, pepper, and dried Italian herbs on both sides.

  2. 2

Heat olive oil and butter in a large skillet over medium-high heat until the butter is melted and slightly foaming. Add chicken breasts and sear for 5-7 minutes per side, until golden brown and cooked through to an internal temperature of 165 degrees F. Remove chicken from the skillet and set aside on a plate, tented with foil.

  3. 3

Reduce heat to medium. Add minced garlic to the skillet and cook for 30 seconds until fragrant, being careful not to burn it.

  4. 4

Stir in the chopped sun-dried tomatoes and chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 2-3 minutes, allowing the liquid to reduce slightly.

  5. 5

Pour in the heavy cream and stir in the Parmesan cheese. Continue to simmer for 3-5 minutes, stirring occasionally, until the sauce thickens to your desired consistency.

  6. 6

Stir in the fresh spinach and cook just until it wilts, about 1-2 minutes. Return the cooked chicken breasts to the skillet, spooning the creamy sauce over them.

  7. 7

Serve immediately, garnished with fresh basil if desired. This dish pairs wonderfully with pasta, rice, or crusty bread to soak up the delicious sauce.
