Instructions

  1. 1

Pat the chicken thighs dry with paper towels, then season generously with salt, black pepper, garlic powder, and paprika on both sides.

  2. 2

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter is melted and shimmering, place the chicken thighs skin-side down in the skillet.

  3. 3

Sear the chicken for 8-10 minutes until the skin is deeply golden and crispy. Flip the chicken and cook for another 5-7 minutes, or until cooked through and an internal temperature of 74 degrees Celsius is reached. Remove chicken from the skillet and set aside to rest.

  4. 4

While the chicken rests, add the remaining 1 tablespoon of butter to the same skillet. Add the broccoli florets and a splash of water (about 30 ml), cover, and steam for 3-5 minutes until crisp-tender. Season with a pinch of salt and pepper. Remove broccoli from the skillet.

  5. 5

In the same skillet, reduce the heat to medium-low. Pour in the milk, mayonnaise, and Tabasco sauce. Whisk constantly for 3-5 minutes until the sauce thickens slightly and is smooth and creamy. Adjust seasoning with salt and pepper if needed.

  6. 6

In a small dry pan, lightly toast the crushed graham crackers over medium-low heat for 2-3 minutes until fragrant and slightly golden. Be careful not to burn them.

  7. 7

To serve, spoon the spicy milk reduction onto plates. Arrange the pan-seared chicken and steamed broccoli over the sauce. Sprinkle the toasted graham cracker crumbs generously over the broccoli for a delightful crunch.

  8. 8

Serve immediately, savoring the rich flavors and varied textures of this elegant dish.
