Instructions

  1. 1

Pat chicken thighs dry and season generously on both sides with salt, pepper, and dried oregano.

  2. 2

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Place chicken thighs skin-side down and sear for 8-10 minutes until the skin is deeply golden brown and crispy.

  3. 3

Flip the chicken thighs and cook for another 2-3 minutes on the other side. Remove chicken from the skillet and set aside.

  4. 4

Add the remaining 1 tablespoon of olive oil to the skillet. Add the thinly sliced onions and cook over medium heat, stirring occasionally, for 10-12 minutes until softened and beginning to caramelize.

  5. 5

Stir in the thinly sliced garlic and halved cherry tomatoes. Cook for another 5-7 minutes until tomatoes begin to soften and burst, releasing their juices.

  6. 6

Return the chicken thighs to the skillet, nestling them among the vegetables. Cover the skillet with a lid or foil and cook over low heat for 5-7 minutes, or until chicken is cooked through and reaches an internal temperature of 74 degrees Celsius.

  7. 7

Alternatively, if using an oven-safe skillet, transfer to a preheated oven at 180 degrees Celsius for 10-15 minutes until chicken is cooked through.

  8. 8

Taste and adjust seasoning with salt and pepper as needed.

  9. 9

Serve immediately, ensuring each plate gets a generous portion of the flavorful onion and tomato mixture.
