Pan-Seared Chicken and Shrimp with Roasted Tomato-Onion Jam

Ingredients

  • •2 boneless, skinless chicken breasts, about 6 ounces each
  • •8 large shrimp, peeled and deveined
  • •2 large ripe tomatoes, quartered
  • •1 medium red onion, cut into 8 wedges
  • •2 tablespoons olive oil
  • •1/2 teaspoon salt, divided
  • •1/4 teaspoon black pepper, divided
  • •1/4 teaspoon dried oregano

Instructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit, 200 degrees Celsius. In a medium baking dish, toss the quartered tomatoes and onion wedges with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Roast for 25 minutes, or until softened and slightly caramelized, stirring halfway through. This will form the base of your jam.

  2. 2

While the vegetables roast, pat the chicken breasts dry and season them on both sides with 1/8 teaspoon of salt and 1/8 teaspoon of black pepper. Season the shrimp with the remaining 1/8 teaspoon of salt and 1/8 teaspoon of black pepper.

  3. 3

Heat a large skillet over medium-high heat with the remaining 1 tablespoon of olive oil. Once hot, carefully place the seasoned chicken breasts in the skillet. Sear for 6-8 minutes per side, or until golden brown and cooked through, with an internal temperature of 165 degrees Fahrenheit, 74 degrees Celsius. Remove chicken from the skillet and set aside to rest.

  4. 4

Add the seasoned shrimp to the same skillet, cooking for 2-3 minutes per side, until pink and opaque. Be careful not to overcook them.

  5. 5

Once the roasted tomatoes and onions are ready, carefully transfer them to a small bowl. Mash them lightly with a fork to create a rustic jam-like consistency. Stir in the dried oregano.

  6. 6

To serve, slice the rested chicken breasts. Arrange the sliced chicken and cooked shrimp on plates. Spoon the warm roasted tomato and onion jam generously alongside or over the protein. Serve immediately for best flavor and texture.
