Ingredients
- •300g beef tenderloin or sirloin, cut into 2 medallions
- •2 medium carrots, peeled and cut into 5cm pieces
- •4 small tomatoes, halved
- •3 tablespoons olive oil
- •0.5 teaspoon salt
- •0.25 teaspoon black pepper
- •1 teaspoon sugar
- •2 tablespoons water
Instructions
- 1
Pat beef medallions dry with paper towels and season generously with salt and black pepper on all sides.
- 2
For the tomato confit, place halved tomatoes in a small oven-safe dish. Drizzle with 1 tablespoon of olive oil, a pinch of salt, and pepper. Bake at 150 degrees Celsius for 20-25 minutes, or until softened and slightly shriveled.
- 3
While tomatoes confit, prepare the glazed carrots. Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add carrot pieces and sauté for 5 minutes.
- 4
Add sugar and 2 tablespoons of water to the carrots. Bring to a simmer, cover, and cook for 8-10 minutes, or until carrots are tender-crisp and the liquid has reduced to a glaze. Uncover for the last minute to evaporate any excess liquid.
- 5
Heat the remaining 1 tablespoon of olive oil in a separate medium skillet over medium-high heat until shimmering. Carefully place beef medallions in the hot skillet.
- 6
Sear beef for 3-4 minutes per side for medium-rare, or to your desired doneness, forming a beautiful crust. Let the beef rest on a cutting board for 5 minutes after cooking.
- 7
To plate, arrange a beef medallion on each plate. Spoon the glazed carrots alongside and scatter the warm tomato confit around the beef. Serve immediately.
