Microwave Mug Omelet with Cheese and Chives

Crack the two large eggs into a microwave-safe mug (about 10-12 oz size).

Add the milk, salt, and pepper to the mug. Whisk vigorously with a fork until the eggs are well combined and slightly frothy.

Microwave on high for 1 minute. Remove and stir gently with a fork to break up any cooked portions. Return to the microwave.
