Instructions

  1. 1

To make the pickled red onions, combine the rice vinegar, water, sugar, and salt in a saucepan, and bring to a boil. Add the sliced red onion and remove from heat. Let it cool to room temperature, then refrigerate for at least 30 minutes.

  2. 2

Rinse the short-grain rice in cold water until the water runs clear. Cook the rice according to package instructions or using a rice cooker.

  3. 3

In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic, shiitake mushrooms, and cremini mushrooms, stir-frying for 5 minutes or until the mushrooms are tender.

  4. 4

Add the thinly sliced beef sirloin to the skillet, cooking for 2-3 minutes or until browned. Stir in the soy sauce, mirin, sake, sesame oil, and sugar, simmering for an additional 5 minutes until the sauce has thickened.

  5. 5

Divide the cooked short-grain rice among two bowls. Top with the beef and mushroom mixture, and garnish with pickled red onions and sesame seeds, if desired.
