Honey-Kissed Chicken and Tomato Roast with Crispy Potatoes

Ingredients

  • •200 grams diced chicken breast
  • •2 medium potatoes, peeled and diced into 2 cm cubes
  • •100 grams cherry tomatoes
  • •2 tablespoons honey
  • •1 tablespoon olive oil
  • •1/2 teaspoon salt
  • •1/4 teaspoon black pepper
  • •1/2 teaspoon paprika
  • •1/4 teaspoon garlic powder
  • •Optional: A sprinkle of fresh black pepper for garnish

Instructions

  1. 1

Preheat your oven to 200 degrees Celsius. Line a baking sheet with parchment paper for easy cleanup.

  2. 2

In a large bowl, combine the diced chicken, potato cubes, and cherry tomatoes. Drizzle with olive oil, then sprinkle with salt, black pepper, paprika, and garlic powder. Toss everything gently to ensure an even coating.

  3. 3

Spread the seasoned chicken, potatoes, and tomatoes in a single layer on the prepared baking sheet, ensuring they are not overcrowded.

  4. 4

Roast in the preheated oven for 15 minutes. After 15 minutes, carefully remove the baking sheet from the oven.

  5. 5

Drizzle the honey evenly over the chicken and vegetables. Gently toss them on the baking sheet to coat.

  6. 6

Return the baking sheet to the oven and continue to roast for another 10 to 15 minutes, or until the chicken is cooked through, the potatoes are tender and slightly crispy, and the tomatoes have burst.

  7. 7

Carefully remove from the oven. Serve immediately, garnished with an optional sprinkle of fresh black pepper for an extra touch of aroma.

  8. 8

This dish is best enjoyed fresh from the oven, allowing the honey glaze to shine.
