Hearty Spiced Chicken Braise

Ingredients

  • •400 grams chicken thighs, bone-in, skin-on, 2 pieces
  • •15 ml olive oil
  • •5 grams salt
  • •3 grams black pepper
  • •2 grams ground cumin
  • •2 grams ground coriander
  • •2 grams paprika
  • •1 gram chili powder (optional, for a subtle warmth)
  • •250 ml water

Instructions

  1. 1

Season the chicken thighs generously on all sides with salt and black pepper.

  2. 2

Heat the olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat until hot.

  3. 3

Carefully place the chicken thighs skin-side down into the hot pot and sear for 5-7 minutes until the skin is deeply golden brown and crispy.

  4. 4

Flip the chicken thighs and sear the other side for 3-4 minutes, then remove them from the pot and set aside.

  5. 5

Reduce the heat to medium-low, add the ground cumin, ground coriander, paprika, and optional chili powder to the pot, stirring constantly for 1 minute to toast the spices until fragrant.

  6. 6

Return the chicken thighs to the pot, pour in the water, ensuring the chicken is partially submerged.

  7. 7

Bring the liquid to a gentle simmer, then cover the pot, reduce the heat to low, and braise for 45-60 minutes, or until the chicken is fork-tender and easily pulls away from the bone.

  8. 8

Carefully remove the chicken, optionally increase heat to reduce the sauce slightly if desired, then serve the tender chicken with the rich, spiced braising liquid.
