Hearty Hunters Stew with Rich Tomato Broth

Ingredients

  • •150 grams pork shoulder, cut into 2 centimeter cubes
  • •150 grams boneless skinless chicken thighs, cut into 2 centimeter cubes
  • •3 large ripe tomatoes, roughly chopped
  • •15 milliliters olive oil
  • •5 grams salt
  • •2 grams black pepper
  • •3 grams ground cumin
  • •3 grams chili powder
  • •200 milliliters water

Instructions

  1. 1

Pat the pork and chicken cubes dry with paper towels. Season both meats with salt and black pepper.

  2. 2

Heat the olive oil in a large heavy bottomed pot or Dutch oven over medium high heat. Add the pork cubes and sear them until browned on all sides, about 5-7 minutes. Remove pork and set aside.

  3. 3

Add the chicken cubes to the same pot and sear until lightly browned, about 4-5 minutes. Remove chicken and set aside with the pork.

  4. 4

Reduce the heat to medium. Add the roughly chopped tomatoes to the pot. Cook, stirring occasionally, for 8-10 minutes until they soften significantly and release their juices, forming a rustic base.

  5. 5

Stir in the ground cumin and chili powder, cooking for 1 minute until fragrant. Pour in the water, scraping up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer.

  6. 6

Return the seared pork and chicken to the pot. Ensure the meat is mostly submerged in the tomato broth.

  7. 7

Reduce the heat to low, cover the pot, and simmer for 45-60 minutes, or until both the pork and chicken are fork tender. Stir occasionally to prevent sticking.

  8. 8

Taste and adjust seasoning if needed. Serve this hearty stew hot, allowing the rich flavors to comfort and satisfy.
