Instructions

  1. 1

Cut chicken thighs into large bite-sized pieces. Peel and cut potatoes into 2cm cubes. Slice the onion into thin half-moons.

  2. 2

Heat 1 tablespoon vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Sear chicken pieces until golden brown on all sides, about 5-7 minutes. Remove chicken and set aside.

  3. 3

Add the remaining 1 tablespoon vegetable oil to the pot. Add sliced onions and cook over medium heat, stirring occasionally, for 8-10 minutes until softened and beginning to caramelize.

  4. 4

Stir in 1 teaspoon salt, 0.5 teaspoon black pepper, and 1 teaspoon ground cumin. Cook for 1 minute until fragrant.

  5. 5

Return chicken to the pot. Add potato cubes and 250ml water. Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until potatoes are fork-tender and chicken is cooked through.

  6. 6

Stir gently to combine the rich gravy with the chicken and potatoes. Taste and adjust seasoning if necessary.

  7. 7

Serve hot, optionally with a very light sprinkle of chili powder for an extra layer of flavor.
