Instructions
- 1
Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
- 2
Add the minced garlic and grated ginger to the pot. Cook for another 1-2 minutes until fragrant, being careful not to burn the garlic.
- 3
Stir in the ground cumin, ground coriander, turmeric powder, garam masala, and cayenne pepper. Cook for 1 minute, stirring constantly, until the spices are fragrant.
- 4
Pour in the diced tomatoes (undrained) and chicken broth. Bring the mixture to a simmer, then add the chicken pieces and potato cubes. Season with salt and pepper. Stir well to combine.
- 5
Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the chicken is cooked through and the potatoes are tender. Stir occasionally to prevent sticking.
- 6
Stir in the coconut milk and heat through for 2-3 minutes. Do not boil after adding coconut milk. Taste and adjust seasoning if necessary.
- 7
While the curry is simmering, warm the naan bread according to package instructions. Garnish the curry with fresh chopped cilantro before serving. Serve hot with warm naan bread.
