Hearty Beef and Mushroom Stroganoff with Egg Noodles

- •2 tbsp unsalted butter
- •1 large yellow onion, finely chopped
- •12 oz cremini mushrooms, sliced

- •1 tsp Dijon mustard
- •1 tsp Worcestershire sauce
- •1/2 cup beef broth
- •1/2 cup dry white wine (optional, or more beef broth)
- •1 cup sour cream, at room temperature
- •2 tbsp all-purpose flour
- •Salt and freshly ground black pepper to taste
- •12 oz wide egg noodles
- •Fresh parsley, chopped, for garnish

Pat the beef strips dry with paper towels and season generously with salt and pepper. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Brown the beef in batches, about 2-3 minutes per batch, ensuring not to overcrowd the pan. Remove the browned beef and set aside.

Reduce the heat to medium, add the butter to the skillet. Add the chopped onion and cook until softened, about 5-7 minutes. Add the sliced mushrooms and cook until they release their liquid and turn golden brown, about 8-10 minutes. Stir in the minced garlic and cook for another minute until fragrant.

Sprinkle the flour over the vegetables and stir well, cooking for 1-2 minutes to create a roux. Deglaze the pan with the white wine (if using) and beef broth, scraping up any browned bits from the bottom. Bring to a simmer, then stir in the Dijon mustard and Worcestershire sauce.

Return the browned beef to the skillet. Reduce the heat to low, cover, and simmer for 10-15 minutes, or until the beef is tender. While the stroganoff simmers, cook the egg noodles according to package directions. Drain well.

Remove the skillet from the heat. Gradually stir in the room temperature sour cream until fully incorporated and the sauce is creamy. Do not boil after adding the sour cream, as it may curdle. Taste and adjust seasoning with salt and pepper as needed.
