Hearty Beef and Chicken Stew with Smoked Bacon

Ingredients

  • •Beef stewing beef
  • •Chicken boneless, skinless thighs
  • •Bacon
  • •Onions
  • •Garlic
  • •Salt
  • •Black Pepper
  • •Cooking Oil
  • •Water

Instructions

  1. 1

Cut beef into 1-inch cubes and chicken into similar-sized pieces. Season both generously with salt and black pepper.

  2. 2

In a large, heavy-bottomed pot or Dutch oven, cook bacon over medium heat until crispy, about 5-7 minutes. Remove bacon, drain on paper towels, and set aside. Leave rendered fat in the pot.

  3. 3

Increase heat to medium-high. Sear beef cubes in batches until deeply browned on all sides, about 3-4 minutes per batch. Remove beef and set aside.

  4. 4

Add chicken pieces to the pot and sear until lightly browned, about 3-5 minutes. Remove chicken and set aside.

  5. 5

Reduce heat to medium. Add sliced onions to the pot and cook, stirring occasionally, for 7-10 minutes until softened and translucent.

  6. 6

Add minced garlic to the onions and cook for 1 minute until fragrant.

  7. 7

Return seared beef and chicken to the pot. Pour in enough water to just cover the meat about 3-4 cups, scraping up any browned bits from the bottom. Bring to a simmer.

  8. 8

Reduce heat to low, cover the pot, and simmer gently for at least 1 hour to 1 hour 30 minutes, or until both beef and chicken are fork-tender. Stir occasionally and add more water if needed to maintain desired consistency.

  9. 9

Taste and adjust seasoning with salt and pepper as needed. Just before serving, stir in the crumbled crispy bacon. Serve hot.
