Ingredients
- •300g chicken breast, cut into 2cm cubes
- •2 large onions, thinly sliced
- •4 eggs
- •2 tablespoons cooking oil
- •Salt, to taste
- •Black pepper, to taste
- •Optional: a pinch of black pepper for garnish
Instructions
- 1
Pat the chicken cubes dry with a paper towel and season generously with salt and black pepper.
- 2
Heat 1 tablespoon of cooking oil in a large skillet over medium-high heat. Add the chicken and sear until golden brown on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- 3
Add the remaining 1 tablespoon of cooking oil to the same skillet. Add the sliced onions and cook over medium heat, stirring occasionally, until deeply caramelized and soft, about 8-10 minutes. Season with a pinch of salt.
- 4
While onions are cooking, whisk the eggs in a bowl with a pinch of salt and pepper until well combined.
- 5
Return the seared chicken to the skillet with the caramelized onions. Stir to combine.
- 6
Pour the whisked eggs over the chicken and onions. Let the eggs set for a few seconds, then gently push them around with a spatula until they are softly scrambled and cooked through but still moist, about 2-3 minutes.
- 7
Taste and adjust seasoning if necessary. Serve immediately, optionally garnished with a pinch of black pepper.
