Ingredients

  • 4 slices of bread (brioche or challah recommended)
  • 2 large eggs
  • 1/2 cup milk (any kind)
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of cinnamon (optional)
  • 1 tablespoon butter or cooking oil, for griddle
  • 4 slices of bacon
  • 1/4 cup maple syrup, for serving

Instructions

    In a shallow dish, whisk together the eggs, milk, sugar, vanilla extract, and cinnamon (if using) until well combined.

    Heat a large skillet or griddle over medium heat. Add the bacon and cook for 5-7 minutes, flipping occasionally, until crispy. Remove bacon from the skillet and place on a paper towel-lined plate to drain. Keep warm.

    Add 1 tablespoon of butter or cooking oil to the same skillet/griddle. Dip each slice of bread into the egg mixture, allowing it to soak for about 10-15 seconds per side. Don't let it get too soggy.

    Place the soaked bread onto the hot skillet/griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through.

    Serve the French toast immediately with the crispy bacon on the side. Drizzle generously with maple syrup.
