Fiery Gochujang Glazed Chicken Thighs with Cooling Sesame Noodles

Ingredients

  • •8 bone-in, skin-on chicken thighs
  • •1/4 cup gochujang Korean chili paste
  • •3 tablespoons soy sauce
  • •2 tablespoons honey
  • •1 tablespoon rice vinegar
  • •1 tablespoon sesame oil
  • •3 cloves garlic, minced
  • •1 inch fresh ginger, grated
  • •12 ounces ramen noodles or similar egg noodles
  • •1/4 cup soy sauce
  • •2 tablespoons rice vinegar
  • •2 tablespoons sesame oil
  • •1 tablespoon honey
  • •1 clove garlic, minced
  • •1/2 English cucumber, julienned
  • •2 carrots, julienned
  • •4 scallions, thinly sliced
  • •2 tablespoons toasted sesame seeds
  • •Optional: Red chili flakes for extra heat

Instructions

  1. 1

Prepare the chicken: Preheat your oven to 400 degrees Fahrenheit, 200 degrees Celsius. Pat the chicken thighs dry with paper towels.

  2. 2

Make the glaze: In a medium bowl, whisk together the gochujang, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined.

  3. 3

Glaze and roast chicken: Place the chicken thighs in a large baking dish. Pour about two-thirds of the gochujang glaze over the chicken, ensuring all pieces are well coated. Reserve the remaining glaze for basting. Roast for 30-35 minutes, basting with the reserved glaze every 10 minutes, until the chicken is cooked through, the skin is crispy, and the glaze is caramelized.

  4. 4

Cook the noodles: While the chicken roasts, cook the ramen noodles according to package directions until al dente. Drain well and rinse with cold water to stop the cooking and prevent sticking.

  5. 5

Prepare noodle sauce: In a large bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, and minced garlic for the sesame noodles.

  6. 6

Assemble noodles: Add the drained and cooled noodles to the bowl with the sauce. Add the julienned cucumber, julienned carrots, and thinly sliced scallions. Toss everything together until the noodles and vegetables are evenly coated. Sprinkle with toasted sesame seeds.

  7. 7

Serve: Once the chicken is done, remove it from the oven. Serve the hot, sticky gochujang chicken thighs alongside the cooling sesame noodles. Garnish with optional red chili flakes if desired.
