Fiery Apple Cider Jam Chews

Ingredients

  • •Apple cider jam: 200g
  • •Water: 50ml
  • •Cinnamon powder: 2g
  • •Ginger powder: 2g
  • •Red chili flakes: 1g (adjust to desired heat)
  • •Optional: A few drops of olive oil for greasing the tray

Instructions

  1. 1

Lightly grease a small baking sheet or a heatproof dish, approximately 15cm by 15cm, with a few drops of olive oil. Set aside.

  2. 2

In a medium-sized heavy-bottomed saucepan, combine the apple cider jam and water. Stir well to combine.

  3. 3

Place the saucepan over medium-high heat. Bring the mixture to a rolling boil, stirring occasionally.

  4. 4

Continue to boil the mixture vigorously, stirring more frequently as it thickens, for approximately 10 to 15 minutes. The mixture will start to darken and thicken considerably.

  5. 5

To test for readiness, drop a small amount of the hot mixture into a glass of cold water; it should form a firm, chewy ball. If it's too soft, continue boiling for a few more minutes and retest.

  6. 6

Once the desired consistency is reached, quickly stir in the cinnamon powder, ginger powder, and red chili flakes. Mix thoroughly to ensure even distribution of the spices.

  7. 7

Immediately pour the hot, thickened mixture onto the prepared greased tray. Use a greased spatula or the back of a spoon to quickly spread it into an even layer, about 0.5cm thick.

  8. 8

Allow the mixture to cool completely at room temperature for at least 2 hours, or until it is firm enough to handle. Once cooled, use a sharp, greased knife to cut the jam sheet into small, uniform squares or rectangles, approximately 2cm by 2cm, to create the chews.
