Ingredients
- •300g chicken breast, pounded to 1cm thickness
- •1 large onion, cut into 1cm thick rings
- •2 eggs
- •3 tablespoons cooking oil
- •Salt, to taste
- •Black pepper, to taste
- •Optional: a sprinkle of black pepper for presentation
Instructions
- 1
Season both sides of the pounded chicken cutlets generously with salt and black pepper.
- 2
Heat 1 tablespoon of cooking oil in a large skillet over medium-high heat. Add the chicken cutlets and sear for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and keep warm.
- 3
Add another 1 tablespoon of cooking oil to the same skillet. Add the onion rings in a single layer and cook over medium heat, flipping occasionally, until softened, slightly caramelized, and lightly crispy at the edges, about 5-7 minutes. Season with a pinch of salt.
- 4
While onions cook, heat the remaining 1 tablespoon of cooking oil in a separate non-stick skillet over medium heat for the eggs.
- 5
Carefully crack each egg into the hot skillet. Fry for 2-3 minutes, or until the whites are set and the yolks are still runny. Season with salt and black pepper.
- 6
To plate, arrange the seared chicken cutlets on serving plates. Top with the sweet onion rings.
- 7
Carefully place a fried egg on top of or alongside each chicken cutlet.
- 8
Serve immediately, optionally with a sprinkle of black pepper for presentation.
