Crispy Pork Belly with Savory Bacon and Tomato Relish

Ingredients

  • •300 grams pork belly, skin on
  • •100 grams bacon, finely diced
  • •2 medium tomatoes, diced
  • •1 small onion, finely diced
  • •3 cloves garlic, minced
  • •1 tablespoon olive oil
  • •Salt to taste
  • •Black pepper to taste
  • •50 ml water

Instructions

  1. 1

Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Season the pork belly generously with salt and black pepper, ensuring it gets into the scores.

  2. 2

Place the pork belly skin-side up in a cold, oven-safe skillet or roasting pan. Place in a cold oven and set the temperature to 180 degrees Celsius. Cook for 45-50 minutes, or until the skin is crispy and puffed.

  3. 3

While the pork belly cooks, prepare the relish. In a separate saucepan, cook the finely diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the pan.

  4. 4

Add the finely diced onion to the bacon fat in the saucepan and cook over medium-low heat for 5-7 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.

  5. 5

Stir in the diced tomatoes and water. Bring to a simmer, then reduce heat to low and cook for 10-15 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens into a rustic relish. Season with salt and pepper.

  6. 6

Once the pork belly is crispy, remove it from the oven and let it rest for 5 minutes before slicing into thick pieces. The resting period is crucial for juicy results.

  7. 7

Stir the crispy bacon bits back into the tomato relish. To serve, arrange the crispy pork belly slices on plates and spoon a generous amount of the savory bacon and tomato relish alongside or on top of the pork.
