Instructions

  1. 1

Preheat oven to 400°F (200°C). Bring a large pot of salted water to a boil for the mashed potatoes.

  2. 2

While the water heats, prepare the green beans. Toss the trimmed green beans with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until tender-crisp and slightly browned.

  3. 3

Add the quartered potatoes to the boiling water and cook for 15-20 minutes, or until very tender. Drain thoroughly and return to the hot pot.

  4. 4

While potatoes cook, prepare the chicken. Pat chicken breasts very dry with paper towels. Season generously on both sides with salt, pepper, dried thyme, and paprika.

  5. 5

Heat the remaining 1 tablespoon of olive oil in a large oven-safe skillet (cast iron works best) over medium-high heat. Once hot, add the chicken breasts. Sear for 5-7 minutes per side, until golden brown and a crust forms. Transfer the skillet to the oven and cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F (74°C). Remove chicken from skillet, tent with foil, and let rest for 5 minutes.

  6. 6

While chicken rests, finish the mashed potatoes. Add butter, milk, heavy cream, and minced garlic to the drained potatoes. Mash with a potato masher or fork until smooth and creamy. Season with salt and pepper to taste.

  7. 7

Serve the crispy pan-seared chicken breast immediately with a generous portion of creamy mashed potatoes and roasted green beans.
