Creamy Tomato Pasta with Spinach and Italian Sausage

- •1 pound Italian sausage (mild or hot, casings removed)
- •1 medium yellow onion, chopped
- •2 cloves garlic, minced
- •1 (28 ounce) can crushed tomatoes
- •1/2 cup chicken broth
- •1/2 cup heavy cream
- •1/2 teaspoon dried oregano
- •1/4 teaspoon red pepper flakes (optional)
- •Salt and freshly ground black pepper to taste
- •8 ounces short pasta (such as penne, rigatoni, or rotini)
- •5 ounces fresh spinach
- •1/4 cup grated Parmesan cheese, plus more for serving
- •Fresh basil, chopped, for garnish (optional)

Bring a large pot of salted water to a boil for the pasta. Cook the pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.

While the pasta cooks, heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat and remove the sausage to a plate, leaving a tablespoon of drippings in the pan.

Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.

Stir in the crushed tomatoes, chicken broth, heavy cream, dried oregano, and red pepper flakes (if using). Bring the sauce to a simmer, then reduce heat to low and let it cook for 10 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

Return the cooked sausage to the sauce. Add the fresh spinach and stir until it wilts, about 2-3 minutes. Stir in the cooked and drained pasta and the reserved pasta water, adding a little at a time until the sauce reaches your desired consistency. Stir in the Parmesan cheese.
