Creamy Tomato Pasta Salad with Romano

Ingredients

  • 8 oz (about 2 cups) rotini or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mayonnaise
  • 1/4 cup tomato paste
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Pecorino Romano cheese, plus more for garnish
  • 2 tablespoons fresh basil, chopped
  • Salt to taste

    Cook the pasta according to package directions until al dente. Drain well and rinse with cold water to stop the cooking and cool the pasta. Set aside.

    While the pasta cooks, prepare the dressing. In a medium bowl, whisk together the mayonnaise, tomato paste, red wine vinegar, olive oil, dried oregano, garlic powder, and black pepper until smooth.

    Add the grated Pecorino Romano cheese to the dressing and mix well. Taste and season with salt as needed.

    In a large bowl, combine the cooled pasta, halved cherry tomatoes, and chopped fresh basil.

    Pour the creamy tomato dressing over the pasta mixture. Toss gently until all the pasta and vegetables are evenly coated.
