Creamy Tomato and Spinach Tortellini with Italian Sausage

- •1/2 cup chicken broth
- •1/2 cup heavy cream
- •4 cups fresh spinach
- •1 (19 ounce) package refrigerated cheese tortellini
- •1/2 cup grated Parmesan cheese, plus more for serving
- •Salt and freshly ground black pepper to taste
- •Fresh basil, chopped, for garnish (optional)

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes. Drain off any excess grease and transfer the sausage to a plate, leaving a small amount of drippings in the pan.

Reduce heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
