Instructions

  1. 1

Preheat oven to 375°F. In a large skillet, heat 1 tbsp olive oil over medium heat. Add garlic and cook, stirring frequently, until fragrant, about 1 minute. Add spinach and cook, stirring occasionally, until wilted, about 3 minutes. Remove from heat and let cool slightly.

  2. 2

In a medium bowl, combine sautéed spinach, sun-dried tomatoes, ricotta, Parmesan, 1/4 tsp salt, and 1/8 tsp black pepper. Stir until well combined. Set aside.

  3. 3

Using a sharp knife, carefully butterfly each chicken breast by slicing horizontally, but not all the way through, to create a pocket. Season both sides of the chicken breasts with the remaining salt and pepper.

  4. 4

Stuff each chicken breast with about 1/4 cup of the spinach and ricotta mixture. Press gently to close the pocket and secure with toothpicks if necessary.

  5. 5

In a shallow dish, combine panko breadcrumbs, parsley, and 1 tbsp olive oil, mixing until the breadcrumbs are evenly coated. Brush the beaten egg over the stuffed chicken breasts, then dredge each breast in the panko mixture, pressing gently to adhere.

  6. 6

In the same large skillet, heat 1 tbsp olive oil over medium heat. Add the stuffed chicken breasts and cook until golden brown, about 3-4 minutes per side. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.

  7. 7

While the chicken is baking, sauté the diced tomatoes in a small skillet with a pinch of salt and pepper until softened, about 5 minutes. Remove the chicken from the oven and let rest for 5 minutes before serving. Top each chicken breast with sautéed tomatoes and garnish with fresh basil and a drizzle of balsamic glaze, if desired.
