Creamy Mushroom and Bacon Pasta with Poached Egg

Ingredients

  • •200g pasta (e.g., spaghetti or fettuccine)
  • •100g bacon, diced
  • •150g mushrooms, sliced
  • •1/2 onion, finely chopped
  • •2 cloves garlic, minced
  • •150ml cream
  • •2 large eggs
  • •15ml olive oil
  • •Salt to taste
  • •Black pepper to taste
  • •Optional: 30g grated Cheese for garnish

Instructions

  1. 1

Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package directions until al dente.

  2. 2

While the pasta cooks, heat a large skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.

  3. 3

Add the sliced mushrooms, chopped onion, and minced garlic to the skillet with the bacon fat. Sauté over medium heat for 5-7 minutes, until the mushrooms are tender and browned and the onion is translucent.

  4. 4

Pour in the cream and bring to a gentle simmer. Season with salt and pepper. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.

  5. 5

While the sauce simmers, poach the eggs. Fill a small pot with water, add a pinch of salt, and bring to a gentle simmer (not a rolling boil). Carefully crack each egg into the simmering water and cook for 3-4 minutes for a runny yolk.

  6. 6

Drain the cooked pasta and add it directly to the skillet with the cream sauce. Toss well to coat the pasta evenly. Stir in most of the crispy bacon, reserving a little for garnish.

  7. 7

Divide the pasta between two plates. Carefully place one poached egg on top of each serving. Garnish with the reserved crispy bacon and optional grated cheese.

  8. 8

Serve immediately, allowing the runny yolk to mix with the creamy pasta for an extra rich experience.
