Creamy Lemon Mushroom Chicken Risotto

Ingredients

  • •150g boneless, skinless chicken breast, diced
  • •100g cremini mushrooms, sliced
  • •1 small onion, finely chopped
  • •2 cloves garlic, minced
  • •150g Arborio rice
  • •50ml heavy cream
  • •1/2 lemon, juiced
  • •500ml hot water or vegetable broth
  • •2 tablespoons olive oil
  • •Salt to taste
  • •Black pepper to taste

Instructions

  1. 1

Heat olive oil in a large, deep pan over medium heat. Add diced chicken and cook until lightly browned on all sides, about 4-5 minutes. Remove chicken and set aside.

  2. 2

Add chopped onion to the same pan and cook until softened and translucent, about 3-4 minutes. Add minced garlic and sliced mushrooms, cooking for another 5-7 minutes until mushrooms are tender and have released their moisture.

  3. 3

Stir in the Arborio rice, ensuring each grain is coated with the oil and pan drippings. Toast the rice for 1-2 minutes until the edges become translucent.

  4. 4

Begin adding the hot water or broth, one ladleful at a time, stirring constantly. Wait for each addition to be almost fully absorbed before adding the next. Continue this process for about 15-20 minutes.

  5. 5

When the risotto is creamy and the rice is al dente, return the cooked chicken to the pan. Stir in the heavy cream and fresh lemon juice. Season with salt and black pepper to taste.

  6. 6

Cook for another 2-3 minutes, stirring gently, until the risotto reaches your desired consistency. Serve immediately, ensuring it is rich and flowing on the plate.
