Creamy Bacon and Mushroom Pasta
A comforting and satisfying dinner, this creamy pasta dish features crispy bacon, earthy mushrooms, and a rich, velvety sauce. Perfect for a weeknight meal that feels a little bit special.

- •8 oz (225g) pasta (fettuccine, spaghetti, or penne work well)
- •6 slices bacon, cut into 1/2-inch pieces
- •1 tbsp olive oil (if needed)
- •8 oz (225g) cremini or button mushrooms, sliced
- •1 small onion, finely chopped
- •2 cloves garlic, minced
- •1/2 cup dry white wine or chicken broth
- •1 1/2 cups heavy cream
- •1/2 cup grated Parmesan cheese, plus more for serving
- •1/4 cup fresh parsley, chopped
- •Salt and freshly ground black pepper to taste

Cook the pasta according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining. Set aside.

While the pasta cooks, heat a large skillet or Dutch oven over medium heat. Add the bacon pieces and cook until crispy. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate to drain, leaving the rendered bacon fat in the skillet. If there's more than 1-2 tablespoons of fat, drain some off, or add 1 tablespoon of olive oil if there isn't enough.

Add the sliced mushrooms to the skillet and cook over medium-high heat for 5-7 minutes, stirring occasionally, until they are softened and have released their liquid. Add the chopped onion and cook for another 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.

Pour in the white wine or chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes until the liquid has slightly reduced. Reduce the heat to low and stir in the heavy cream. Bring to a gentle simmer and cook for 2-3 minutes, allowing the sauce to thicken slightly.

Add the cooked pasta to the skillet with the sauce. Stir in the grated Parmesan cheese and the reserved crispy bacon. Toss to combine, adding a splash or two of the reserved pasta water if the sauce is too thick. Season with salt and freshly ground black pepper to taste. Stir in the fresh parsley.
