Ingredients
- •2 large bone-in, skin-on chicken thighs, approximately 250g each
- •1 tablespoon olive oil
- •1 teaspoon salt
- •0.5 teaspoon black pepper
- •2 whole garlic cloves, peeled and lightly smashed
- •1 bay leaf
- •0.5 teaspoon dried thyme
- •500ml water
Instructions
- 1
Pat chicken thighs dry with paper towels. Season generously all over with salt and black pepper.
- 2
Heat olive oil in a heavy-bottomed pot or Dutch oven over medium-high heat. Carefully place chicken thighs skin-side down and sear for 5-7 minutes until the skin is golden brown and crispy.
- 3
Flip the chicken and sear for another 2-3 minutes on the other side. Remove chicken from the pot and set aside.
- 4
Add the smashed garlic cloves to the pot and cook for 1 minute until fragrant. Deglaze the pot with a splash of water, scraping up any browned bits from the bottom.
- 5
Return the chicken to the pot. Add the remaining water, bay leaf, and dried thyme. Bring the liquid to a gentle simmer.
- 6
Reduce heat to low, cover the pot tightly, and braise for 1 hour 30 minutes to 2 hours, or until the chicken is exceptionally tender and easily pulls away from the bone.
- 7
Carefully remove the chicken from the pot. Discard the bay leaf. Skim any excess fat from the surface of the braising liquid.
- 8
Serve the chicken with a generous ladle of the aromatic braising liquid.
