Chicken Breast Parmesan with Pasta
A classic Italian-American dish featuring breaded chicken breasts topped with marinara sauce and melted mozzarella and Parmesan cheeses, served alongside al dente pasta. This comforting meal is perfect for a satisfying dinner.

- •1/2 cup all-purpose flour
- •2 large eggs, beaten
- •1 cup plain breadcrumbs
- •1/2 cup grated Parmesan cheese, plus more for serving
- •1 teaspoon garlic powder
- •1/2 teaspoon dried oregano
- •1/4 teaspoon salt
- •1/4 teaspoon black pepper
- •4 tablespoons olive oil, divided
- •2 cups marinara sauce
- •1.5 cups shredded mozzarella cheese
- •8 ounces spaghetti or your favorite pasta
- •Fresh parsley, chopped, for garnish (optional)

Pat chicken breasts dry with paper towels. If chicken breasts are very thick, you can pound them slightly to an even 1/2-inch thickness for quicker cooking.

Set up a breading station: In a shallow dish, combine flour. In a second shallow dish, beat the eggs. In a third shallow dish, combine breadcrumbs, 1/2 cup grated Parmesan cheese, garlic powder, oregano, salt, and pepper.

Dredge each chicken breast first in flour, shaking off excess. Then dip in beaten eggs, allowing excess to drip off. Finally, coat thoroughly in the breadcrumb mixture, pressing gently to adhere.

Heat 3 tablespoons of olive oil in a large oven-safe skillet (cast iron or stainless steel) over medium-high heat. Carefully place the breaded chicken breasts in the hot oil (you may need to do this in batches to avoid overcrowding). Cook for 3-4 minutes per side, until golden brown. The chicken does not need to be cooked through at this stage.

Preheat your oven to 400°F (200°C). While the chicken is browning, cook the pasta according to package directions until al dente. Drain and set aside.

Once chicken is browned, remove from heat. Pour marinara sauce over the chicken breasts in the skillet. Sprinkle generously with shredded mozzarella cheese and a little extra grated Parmesan cheese.

Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/74°C) and the cheese is melted and bubbly.
