Ingredients

  • 2 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 large (10-inch) flour tortillas
  • 4 cups chopped romaine lettuce
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup croutons (optional, crushed)

    Pat chicken breasts dry with paper towels. Season both sides with garlic powder, salt, and pepper.

    Heat olive oil in a medium skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes per side, or until cooked through and no longer pink in the center (internal temperature reaches 165°F/74°C). Remove from skillet and let rest for 5 minutes.

    While the chicken rests, in a large bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and Caesar dressing. Toss gently to coat the lettuce evenly.

    Slice the cooked chicken breasts into thin strips or dice into small cubes.

    Lay each tortilla flat. Divide the dressed Caesar salad mixture evenly among the four tortillas. Top with the sliced or diced chicken and a sprinkle of crushed croutons, if using.

    To wrap, fold in the sides of the tortilla over the filling, then tightly roll up from the bottom. Serve immediately or wrap tightly in plastic for a portable lunch.
