Instructions

  1. 1

In a large pot or Dutch oven, heat olive oil over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the pot and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken and set aside.

  2. 2

Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic, cumin, coriander, turmeric, ginger, and cayenne pepper (if using). Cook for 1 minute more, stirring constantly until fragrant.

  3. 3

Return chicken to the pot. Stir in diced tomatoes, chicken broth, and dried apricots. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 20 minutes.

  4. 4

Add sliced carrots and zucchini to the tagine. Cover and continue to cook for another 15-20 minutes, or until the chicken is cooked through and vegetables are tender. Stir in the green olives and chopped cilantro.

  5. 5

While the tagine is simmering, prepare the couscous according to package directions. Typically, you'll combine 1.5 cups of couscous with 1.5 cups of hot water or broth in a bowl, cover, and let stand for 5 minutes until the liquid is absorbed. Fluff with a fork.

  6. 6

Taste the tagine and adjust seasoning with salt and pepper as needed. Serve the chicken and vegetable tagine hot over the fluffy couscous, garnished with extra fresh cilantro if desired.
