Instructions
- 1
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- 2
Heat a non-stick skillet over medium-low heat. Add 1/4 tablespoon of butter (if using) and let it melt.
- 3
Pour the egg mixture into the hot skillet. Let it sit undisturbed for about 30 seconds until the edges just begin to set.
- 4
Using a rubber spatula, gently push the cooked portions of the eggs from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue this process, folding and stirring gently, until the eggs are mostly set but still slightly moist.
- 5
Sprinkle the shredded cheese over the eggs and continue to cook for another 30 seconds to 1 minute, or until the cheese is melted and the eggs are cooked to your desired consistency. Stir in the fresh chives.
- 6
While the eggs are cooking, toast the slice of whole wheat bread to your preference. You can spread the remaining 1/4 tablespoon of butter on the toast if desired.
- 7
Serve the cheesy scrambled eggs immediately alongside the whole wheat toast.
