Instructions
- 1
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined and slightly frothy.
- 2
Heat the butter or olive oil in a non-stick skillet over medium heat. Pour in the egg mixture. As the eggs begin to set, gently push them from the edges towards the center with a spatula, allowing the uncooked egg to flow underneath.
- 3
Continue cooking and folding the eggs until they are mostly set but still slightly moist. Remove from heat and stir in the shredded cheddar cheese until melted and combined.
- 4
Warm the tortillas: You can do this by heating them in a dry skillet for about 15-30 seconds per side, microwaving them for 15-20 seconds, or wrapping them in foil and placing them in a warm oven for a few minutes.
- 5
To assemble the burritos, lay each warm tortilla flat. Spoon half of the scrambled egg and cheese mixture onto the center of each tortilla. Top with 2 tablespoons of salsa and any optional ingredients like black beans or cilantro. Fold in the sides of the tortilla, then roll it up tightly from the bottom to create a secure burrito. Serve immediately.
- 6
Optional: For an extra warm burrito, you can briefly pan-fry the assembled burrito seam-side down in a dry skillet for 1-2 minutes until lightly golden.
