- •1 tablespoon lime juice
- •1/2 teaspoon ground cumin
- •Salt and black pepper to taste

- •For the Avocado Crema:
- •1 ripe avocado, pitted and scooped
- •1/4 cup sour cream or Greek yogurt
- •1 tablespoon lime juice
- •2 tablespoons water (or more, for desired consistency)

Prepare the Black Bean and Corn Salsa: In a medium bowl, combine the rinsed black beans, thawed corn, diced red onion, chopped cilantro, 1 tablespoon lime juice, and ground cumin. Season with salt and pepper to taste. Mix well and set aside.

Make the Avocado Crema: In a small food processor or blender, combine the avocado, sour cream (or Greek yogurt), 1 tablespoon lime juice, and a pinch of salt. Blend until smooth, adding water a tablespoon at a time until you reach a creamy, pourable consistency.

Assemble the Quesadillas: Heat 1/2 tablespoon of olive oil in a large non-stick skillet over medium heat. Place one tortilla in the skillet. Sprinkle half of the shredded cheese over one half of the tortilla. Spoon half of the black bean and corn salsa over the cheese. Fold the other half of the tortilla over the filling to create a half-moon shape.

Cook the Quesadillas: Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted and bubbly. Carefully remove from the skillet and set aside. Repeat with the remaining tortilla, cheese, salsa, and olive oil.
