Beef and Tofu Scramble with Caramelized Onions and Chili Garlic Oil

Ingredients

  • •1/4 lb Ground beef
  • •1/2 block Silken tofu, drained
  • •1 medium Yellow onion, thinly sliced
  • •2 Eggs, lightly beaten
  • •2 cloves Garlic, minced
  • •1/4 cup Neutral oil (such as vegetable or canola)
  • •1-2 tbsp Red pepper flakes
  • •1/4 tsp Salt
  • •1/4 tsp Black pepper
  • •Optional: Sliced scallions, for garnish
  • •Optional: Crusty bread or tortillas, for serving

Instructions

  1. 1

First, make the chili garlic oil. In a small saucepan, combine the neutral oil, minced garlic, and red pepper flakes. Heat over low heat for about 10-15 minutes, until the garlic is fragrant and lightly golden. Be careful not to burn the garlic. Remove from heat and set aside.

  2. 2

In a large skillet, cook the sliced onions over medium-low heat until softened and deeply caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

  3. 3

Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned, about 5-7 minutes.

  4. 4

Crumble the silken tofu into the skillet with the beef and onions. Cook for another 2-3 minutes, until heated through.

  5. 5

Pour the beaten eggs into the skillet and gently scramble everything together until the eggs are cooked to your liking. Season with salt and pepper.

  6. 6

Drizzle generously with the chili garlic oil.

  7. 7

Garnish with sliced scallions, if desired.

  8. 8

Serve immediately with crusty bread or warm tortillas.
