Baked Salmon with Dill and Roasted Broccoli Florets

Ingredients

  • 4 (6 oz) salmon fillets, skin on or off
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1 lemon, half thinly sliced, half for juicing

    Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Spread the broccoli in a single layer on one half of the prepared baking sheet.

    Pat the salmon fillets dry with paper towels. In a small bowl, combine the remaining 1 tablespoon of olive oil, chopped fresh dill, garlic powder, remaining 1/4 teaspoon of salt, and remaining 1/8 teaspoon of black pepper. Rub this mixture evenly over the salmon fillets.

    Place the seasoned salmon fillets on the other half of the baking sheet, alongside the broccoli. Arrange lemon slices on top of each salmon fillet.

    Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp and slightly charred. Cooking time will vary depending on the thickness of the salmon. For thicker fillets, you may need an additional 5 minutes.

    Remove from the oven, squeeze fresh lemon juice over the salmon and broccoli, and serve immediately.
