Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 8 slices of bacon
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups broccoli florets
  • 2 cups carrots, peeled and sliced into 1/2-inch rounds
  • 1 tablespoon olive oil

    Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Pat chicken breasts dry with paper towels. In a small bowl, combine paprika, garlic powder, salt, and pepper. Sprinkle this seasoning evenly over both sides of the chicken breasts.

    Wrap each chicken breast with two slices of bacon, ensuring the bacon is snug. Place the wrapped chicken breasts seam-side down on the prepared baking sheet.

    Bake for 20-25 minutes, or until the bacon is crispy and the chicken is cooked through (internal temperature reaches 165°F/74°C).

    While the chicken bakes, prepare the vegetables. Place broccoli florets and sliced carrots in a steamer basket over a pot of simmering water. Steam for 5-7 minutes, or until tender-crisp. Alternatively, you can toss them with olive oil and roast them alongside the chicken for the last 15 minutes of cooking.

    Once chicken is cooked, remove from oven and let rest for 5 minutes before serving. Serve the bacon-wrapped chicken breasts with the steamed vegetables.
