Instructions

  1. 1

Step 1: If using fresh corn, cut the kernels off the cob. If using frozen, ensure it is fully thawed and pat dry.

  2. 2

Step 2: Heat the butter or olive oil in a medium skillet over medium-high heat. Add the corn kernels and cook, stirring occasionally, for 5-7 minutes until the corn is slightly charred and tender. This step brings out the sweetness and adds depth of flavor.

  3. 3

Step 3: Remove the skillet from the heat. Stir in the diced red onion and minced jalapeño. The residual heat from the corn will slightly soften them without cooking them down too much, maintaining a fresh crunch.

  4. 4

Step 4: Transfer the corn mixture to a medium bowl. Add the chopped cilantro, fresh lime juice, chili powder, cayenne pepper (if using), and ground cumin. Mix well to combine all ingredients.

  5. 5

Step 5: Season the salsa with salt and freshly ground black pepper to taste. Start with 1/2 teaspoon of salt and adjust as needed.

  6. 6

Step 6: Just before serving, gently fold in the crumbled cotija cheese. Serve immediately or chill for a short period to allow flavors to meld. Garnish with additional cilantro and lime wedges if desired.
