Instructions

  1. 1

Step 1: Preheat your oven to 400°F (200°C). Prepare a baking dish (9x13 inch works well).

  2. 2

Step 2: Butterfly each chicken breast horizontally, then pound them to an even thickness of about 0.5 inch. Season both sides with salt and pepper.

  3. 3

Step 3: Set up a breading station. In one shallow dish, place the flour. In a second shallow dish, whisk the eggs. In a third shallow dish, combine the breadcrumbs, 0.5 cup grated Parmesan, garlic powder, and oregano.

  4. 4

Step 4: Dredge each chicken cutlet first in the flour, shaking off excess. Then dip in the beaten eggs, letting any extra drip off. Finally, coat thoroughly in the breadcrumb mixture, pressing gently to adhere.

  5. 5

Step 5: Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add two chicken cutlets to the pan (do not overcrowd). Fry for 3-4 minutes per side, until golden brown and cooked through. Remove and place on a wire rack set over a baking sheet to drain excess oil. Repeat with remaining chicken.

  6. 6

Step 6: Spoon about 1 cup of marinara sauce into the bottom of your prepared baking dish. Arrange the fried chicken cutlets over the sauce.

  7. 7

Step 7: Top each chicken cutlet with a generous spoonful of marinara sauce, then place two slices of fresh mozzarella cheese on top of each. Sprinkle with additional grated Parmesan cheese.

  8. 8

Step 8: Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden. If desired, you can broil for the last 1-2 minutes for extra browning, watching carefully to prevent burning.

  9. 9

Step 9: Garnish with fresh chopped basil and serve immediately, perhaps with a side of pasta or a fresh salad.
