Ingredients
- •250 grams mixed fresh berries
- •50 grams granulated sugar
- •200 milliliters cold whipped cream
- •Optional: pinch of salt for berry puree
Instructions
- 1
Wash and prepare the berries. In a small bowl, mash the berries roughly with a fork, leaving some larger pieces for texture, or lightly pulse in a food processor for a smoother puree.
- 2
Stir 30 grams of the granulated sugar and the optional pinch of salt into the mashed berries. Mix well and set aside.
- 3
In a separate, chilled bowl, whip the cold cream with the remaining 20 grams of granulated sugar until soft peaks form. Be careful not to over-whip.
- 4
Prepare two tall, clear parfait glasses or small dessert bowls. Begin by spooning a layer of the sweetened berry mixture into the bottom of each glass.
- 5
Follow with a layer of the whipped cream, spreading it gently over the berry layer.
- 6
Repeat the layering process, alternating between berry mixture and whipped cream, until the glasses are full, ending with a layer of whipped cream on top.
- 7
Carefully place the parfaits in the freezer for at least 2 hours, or until the layers are firm but still spoonable.
- 8
Remove from the freezer 5-10 minutes before serving to allow for a slight softening, ensuring a perfect texture.
